The festival, conceived in Krasnoyarsk to popularise Siberian cuisine, has brought together more than 500 restaurants in four countries.
Until 16 August 2026 the Taigastro festival was held in Irkutsk. It began in Krasnoyarsk in 2021 to popularise the traditions of Siberian cuisine, and in 2026 more than 500 restaurants from Russia, Kazakhstan, Belarus and China took part, including 23 from Irkutsk.
Each restaurant offers a set of three dishes — a starter, a main course and a dessert — made only from local produce: game, fish and wild plants. The Irkutsk sets include Baikal omul pie, omul rillettes, hot-smoked omul, lightly salted omul and stroganina of wild reindeer.
